On long missions the engine oil heats up for an extended time, causing the oil to expand and some amount to be consumed. You want a level that can accommodate that expansion without risking overfill, while still providing enough reserve oil for continued lubrication if some oil is consumed during the flight. Keeping the oil at mid-level gives that buffer: it’s not so full that hot oil would push it into an overfull/foaming condition, and not so low that expansion or consumption would lead to oil starvation. So mid-level is the safest, most practical target for missions longer than six hours.
